If I had £30m of car assets it would not be a barn for storage but a purpose built building with sprinkler systems, alarms, CCTV with firewalls to prevent any fire spreading to the whole building.

I wonder what insurance companies expect in terms of fire, security systems etc when you are insurance that sort thing and at that value?

You'd have thought so, wouldn't you. Especially since each car probably has a tankful of petrol aboard.

I guess ultimately there is no defence against a determined arsonist.

One would have to assume that he's got good insurance though, and that such insurance would have come with compulsory clauses about fire & theft precautions.
