Well at least you now know that driving with a buggrd steering rack would indeed have been a bad idea.
You might want to ask how much the repairer would charge to fix it as a non-insurance job, ask the insurer how much for you to keep the salvage and perhaps speak to a local independent.
You don't care about it being a Cat C or whatever, because IIRC you're going to keep it until it dies anyway. You also know that a steering rack is not structural as such so provided it is replace all will be well. You'll also find the cost of body repairs drops when panel beating and filling is considered rather than just new panels. The insurer will probably insist on either an MOT or an Engineers report before they insure it again, but that's only £50.
You may find there is a deal to be done.
